For Courtney

When I read your blog post today I laughed.  I was going to make bean soup and blog about it, but I forgot to take photos for every step.

Sadness

On Tuesday Kyle came into the kitchen and told me that he wanted to go on his bike to follow some smoke that he could see.  I told him not to go too far because sometimes it looks like a fire is close but it could be far away.  He came back a few minutes later and said that it was 5 houses down and that the street had been blocked with police and ambulances everywhere.

I went outside and found a Community Policing Forum member to speak to.  A house had burnt down in our street.

I felt so very sad for this family.  I don't know them and I don't know how to find out where they are now.  The house is completely gutted and everything inside (the roof too) looks like it has just melted away.

A video

Well these aren't really his first words, but I was trying to upload the video and it was taking forever.  I thought I would try youtube and had to think of a quick title for this clip.  Jesse is repeating so many words now and I love watching that mind of his working.

My Life

Saw this sign on Pinterest.  It sums up how I feel about being a stay-at-home mom.

Travis and Jolene's Wedding - 4 March 2011

Wow, what a beautiful wedding.  The location was awesome, the place settings were superb, the food was delicious.  The company was fantastic. But most importantly, it was a happy wedding.  Travis and Jolene just looked so happy together.  I wish them everything of the best.

Easy vegetarian Pie

This week I started cooking out of the Your Family March 2011.  They had a "Bonus Meals for a Month" article and I thought I would try it out.  I hate thinking of what to make each night for supper so this is really nice.  I am on day 4 now and I am enjoying the meals very much.  Last night we had this pie. Orin used a cookie cutter to make the hearts for me.

Preheat oven to 180 C
Place 4 peeled and thinly sliced potatoes on an oiled baking tray (I just used baking paper)
drizzle with 1 tbsp olive oil, roast for 15 minutes.  (I baked them for 25 minutes while I was preparing everything else).
Heat a further 3 tbs olive oil and 2 tbsp butter in a pan over low heat.
Add 4 onions, cut into thing wedges, and cook for 20 minutes until soft and golden.
Set aside to cool.
Combine onion and potato with 125ml cream, 1 tbsp fresh thyme leaves and 2 crushed garlic cloves.
Season and set aside to cool.
Roll out 2x275g blocks puff pastry on a lightly floured surface to 35cmx20cm rectangles.
Place one sheet on a lightly floured baking tray and spread the mixture in the centre, leaving a 2cm border.  Brush edge with beaten egg, place other sheet on top and press together, pinching until sealed.
Brush with more egg.
Make 2 air holes in the top and bake for 25 minutes until crisp and golden.

Serves 4.

My week

Favorite photo from last week:
I love Orin and Jesse's brown eyes and the mischievous looks on their faces.

The weather in my neck of the woods:  Lovely and warm -  but not too warm.  Feeling a nip in the air in the mornings.

One of my simple pleasures:  Watching Jesse watching the birds in the front garden without me knowing.

On my bedside table:  Box of tissues, a new lamp and scriptures

On my TV:  The TV is off.

On the menu for tonight: Sausage and bean stew

On my To Do List: Start supper and bath children

New Recipe I tried last week: This is an exciting recipe week for me.  I am following a 30 day menu plan that I found in a magazine.  So each day will be a new recipe.

Looking forward to: Travis and Jolene's wedding.

Homemaking Tip for this week:  Get your children to unpack the dishwasher instead of doing it yourself :)
